Avocado Chocolate Pudding

Who doesn’t remember how exciting it was to open your lunch box as a kid and  find out that your Mom had packed a pudding cup for you! It was awesome!! But not only are those pudding cups not vegan, they are really not very good for you. That is not so with this vegan avocado chocolate pudding! It is plant based, healthy, and still tastes like creamy, chocolaty goodness.

Made with avocados and sweetened with maple syrup this is almost as healthy as it gets when it comes to a dessert. It still tastes like creamy, chocolaty goodness though, and it is also an great way to get some extra veg into the kids without any arguments.

This avocado pudding recipe also keeps well in the refrigerator for 3 or 4 days. This is great because I am one of those people who is always buying produce with great intentions, but then all of a sudden I have a bunch that is close to being wasted and I need to get it used. And we all know that the window for avocados is ridiculously limited. It is like this fruit takes secret pleasure in ripening when no one is paying attention. But now if you have a couple avocados in the fruit basket that need immediate attention you can make a yummy snack that everyone will love, and that will keep in the fridge for few more days if it is not used up right away.

You will need:

  • 2 Avocados
  • 2 tbsp Soy or Cashew cream (or 1.5 tbsp of Non-dairy milk)
  • ⅓ cup Cocoa
  • ½ tsp salt
  • ⅓ cup Maple Syrup

How to make Vegan Avocado Chocolate Pudding:

Cut each avocado in half remove the pit and scoop into a medium mixing bowl.

Mash avocados with a fork or potato masher until most of the lumps have been removed.

Add 2 tbsp of soy or cashew cream and whisk until smooth.

Now add the cocoa, salt and maple syrup.

Mix well, refrigerate and serve.

  2. what is soy cream? Is it different than soy milk?

    • Yes it is a little bit thicker, and richer. There are also nut creams like cashew, almond, or coconut. If you do not have these, soy, or a nut milk would probably work ok, maybe start with half the amount, 1 tbsp, and see how the consistency of the pudding is.

  3. And how long time could be refrigerate it?

    • I find that this can be refrigerated for at least 4-5 days, although it does not normally last that long at our house.
