Vegan Apple Cookies

The saying goes “an apple a day keeps the doctor away”. Does the same thing apply if you are eating apple cookies?  Really they are not that healthy, they are cookies after all, but they are vegan cookies, and they have an apple and use a bit less sugar than many other cookie recipes. So while they might not be fulfilling your daily recommended servings of fruit they are a step in the right direction. This recipe is also a great way to use up apples that have gotten a little bit old and are no longer ideal for eating fresh.

These vegan apple cookies are super good. They are  fluffy, light and mellow with a touch of cinnamon spice. My super picky son actually begs for these. They are very easy to make and are a smash hit at school bake sales or family gatherings. There are almost never any leftovers, and it always feels a little extra great watching vegan cookies disappear faster than anything else.

This vegan apple cookie recipe is also great because the cookies keep extremely well and are a great dessert to make ahead and freeze. It also does’t hurt that they are made with apples, and are a little healthier than the average cookie. They are dangerously good though, so remember they are still cookies and eating half a batch in one sitting does not count as eating your fruits and veggies for the day.

You will Need:

For the dough

  • ½ cup Vegan Margarine
  • ¾ cup Sugar
  • 1 Large Apple or 2 Small Apples (peeled and grated)
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1 tsp Salt
  • 1 tsp Vanilla
  • 1 ¾ cup flour

For the coating

  • 3 tbsp of sugar
  • 1.5 tbsp of cinnamon

How to Make Vegan Apple Cookies:

Peel the apple of your choice and then grate it using a cheese grater. I normally use Royal Gala because that is my favorite and what is usually in the house, but most varieties other than maybe Granny Smith will work equally well.

In a medium mixing bowl cream together margarine, sugar.

Then add the baking powder, baking soda, and salt, and mix well.

Stir the grated apple and vanilla into this mix until everything is well combined.

Add the flour in by about a half a cup at a time and mix well.

Mix together cinnamon and sugar in a small dish.

Form the dough into balls. I find that scooping the dough tightly into an ice cream scoop and then dividing into two makes the ideal sized cookie. Roll each ball into the cinnamon and sugar mixture until well coated.

Place balls onto a cookie sheet and press with a fork. Bake at 350° for 10 minutes.

This recipe yields approximately 20 apple cookies.

These are a great dessert after a good meal as they are fluffy and not too heavy. I also enjoy sitting in the evening with a few vegan apples cookies and a cup of lemon ginger tea while I relax with a book.
