Homemade Tomato Soup


My step father comes from a Dutch family and because of this I have been influenced by dutch cooking for most of my life. This homemade tomato soup is a traditional dutch recipe. I have made it a number of times, tweaking it to perfection.

I love this soup for three reasons. It is a simple recipe that holds a lot of flavor. It has only a few ingredients all of which are usually on hand, unless maybe it’s grocery day. And it is vegan!!

Served with some fried bread this is a wonderful lunch, or a perfect side with supper.


You Will Need:

  • 4 cups Water
  • 6 Medium Tomatoes
  • ¹⁄³ cup Flour
  • 2 Shallots
  • 2 tbsp Vegan Margarine
  • 1 tsp Salt


Chop tomatoes, and slice shallots. Then add both along with 4 cups of water and the salt to a medium pot.

Bring to a boil and let simmer for 20 minutes.

Let this cool and then add to the blender in batches blending until smooth.

In a medium sauce pan melt the margarine and add in a little bit of the flour and some of the soup. Continue adding more flour and soup a little at a time and stirring until smooth.

Serve topped with a swirl of vegan cream, and a sprinkle of pepper, along with fried bread cubes. To make these simply cut two pieces of bread into cubes, and fry in melted vegan butter until golden brown.
